Triplet = matrix (backing made of ammonite) + shell + quartz cap (three components / stacked layers each not naturally formed together. like a sandwich.)
Doublet = matrix + shell (two components/stacked layers, base was not naturally formed with shell, artificially attached.)
Natural = as-is naturally 100% formed

Composites vs. free form..
Composites are taking three or more high quality ammolite chips and placing them together to create a tri colored 'aa' shell, which then is then attached to a matrix and capped with quartz. Like a mosaic as opposed to a naturally formed pattern. (not unlike a mosaic opal composite) These pieces are priced high and are as rare as obtaining three bright colors of ammolite chips and a good jeweler to carefully piece them together. This is why a free form tri colored shell (which the colors are naturally occurring together) is much more rare, and what consumers are often led to believe they are purchasing. I am not yet aware of a way to test for composites. If I were out to purchase a tri colored 'aa' piece of ammolite jewelry, I would examine how the colors intermingle with one another, or do the colors look artificially independent of one another..
